For the past 26 years, I have worked on creating recipes that are quick and easy to prepare in the confines of the galley’s I have cheffed in, limited to time due to ever-changing weather conditions on the sea, while still capturing the quality and presentation of a fine dining restaurant dish.
My cookbook highlights favourites of my yacht charter guests over the years. With 80 recipes all with accompanying colour images. If asked to describe my cuisine, I would say – Global, I have been lucky enough to have travelled and worked extensively all over the world, there is most definitely something for everyone, I showcase the flavours of South East Asia, the Mediterranean, The Caribbean, Mexico and North America to name a few. I have also made sure to add special dietary-related recipes.
I am a firm believer in sourcing local produce and ingredients, nothing beats those fresh delicious flavours.
